These peanut butter muffins have a nice grittiness (sounds weird, but that’s what I was craving) that is enhanced by using a crunchy peanut butter. Makes 15-18 muffins.
Ingredients
2/3 cup bran
1 2/3 cups flour
1/3 cup white sugar
1/3 cup brown sugar
1/3 cup vegetable oil
3/4 cup milk
1/2 cup buttermilk
1 cup peanut butter (or more)
1 egg
2 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Directions
- Mix all ingredients together.
- Transfer to a greased muffin pan.
- Bake 15 minutes at 375° F, or until an inserted toothpick comes out clean. Transfer to a wire rack to cool.
