Baked Mulled Wine Donuts with Orange Glaze

Ingredients

  • 2 c flour
  • 1.5 c sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1 egg
  • 1 c red wine (or more, for stronger flavor)
  • up to 1 c milk
  • 1 star anise
  • 2 tsp vanilla extract
  • 2 tbsp butter, melted
  • 1/4 cup freshly squeezed orange juice
  • 2.5 cups powdered sugar
  • grated orange peel

Instructions

  1. Heat red wine with star anise over stove for about one hour, until significantly reduced.
  2. Preheat oven to 350 F.
  3. Spray two donut pans (6 each, for a total of 12 donuts) with cooking spray.
  4. In a mixing bowl, combine dry ingredients (flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves).
  5. Combine reduced wine with milk, for a total combined volume of 1 cup.
  6. Combine wet ingredients (milk and wine mixture, egg, melted butter, and vanilla extract), then mix into dry ingredients. The batter should be fairly thick.
  7. Spoon batter into greased donut pans.
  8. Bake 17 min, until a toothpick comes out clean.
  9. While donuts are baking, make the glaze. Whisk powdered sugar and orange juice together.
  10. After taking donuts out of the oven, let sit in pans for 5 min before transferring to wire rack. When they are cool enough to touch, but still warm, spoon glaze onto donuts, letting it melt a little and drip over the side of donuts. Finally, sprinkle grated zest of one orange over the donuts.
